The second invoice from the order offers only the 15 still open — nobody is invoiced twice. If the café cancels the rest, Close remainder ends the order where it is. While the 15 wait, the Reorder screen counts them as sold, so they are not promised to someone else.
A base price and levels 2, 3 and 4 on each item. Give an account its level, and new lines on its orders and invoices take that price. No price for the level? The base price applies. A price you type on a line stays.
A payment recorded on the sales order goes to the invoices that come from it, first invoice first. The customer is never asked for the same money two times.
A/R aging buckets unpaid invoices by age, net of open credit notes. The statement shows one account's full history with its running balance.

Yes. Each item has a base price and up to three more price levels. Give an account its level, and new lines on its orders and invoices take that price. An item with no price for the level falls back to the base price.
Invoice what is on the shelf and leave the rest on the order. The order shows as partly shipped, the line shows what is on backorder, and the next invoice from the order takes only what is still open.
